Winemaking technique

The base of this wine originates in Valpolicella. It is produced in September/October from fresh grapes, which undergo gentle pressing followed by fermentation in stainless steel tanks. Around the end of October, the Valpolicella base undergoes refermentation on a must obtained from grapes harvested in crates and left to wither for about 40 days. This wine making procedure is called "Rigoverno". After fermentation is complete, the wine ages for 18 months in second-passage French oak tonneaux and rests in the bottle for a minimum of 9 additional months.

Tasting Notes

The Valpolicella Classico Superiore Azione originates from indigenous grapes: Corvina, Corvinone and Rondinella, handpicked from our hillside vineyards located in Negrar di Valpolicella.

Azione is produced using the “Rigoverno method”. The decision to experiment with this process stems from some considerations made about the traditional Ripasso method. With modern winemaking technologies and grapes drying faster due to climate change, the grape skins are more exhausted by the end of the Amarone wine fermentation process.

The Rigoverno method, instead, allows the Valpolicella wine to enrich itself with all the typical aromas of raisined grapes through its refermentation with a must of grapes dried for 40 days.

The Valpolicella Classico Superiore Azione shows a ruby red color with garnet reflections, it is clear and consistent. In the mouth, it is dry, smooth, with long persistence and a pleasant savoriness. It evokes notes of ripe red fruit, sweet spice, and light toasting. On the finish, there is an elegant balsamic note.

This structured wine pairs perfectly with elaborate pasta dishes featuring meat sauces, grilled red meats, braised meats, and roasts.

It also goes well with aged cheeses.
