Winemaking technique

The two grape varieties are vinified separately. Once the first fermentation is complete, the wine is ready for sparkling wine production. The second fermentation takes place in the bottle according to the "Classic Method" with a 24-month period on the lees before disgorging.

Philosophy

Astris originates from the desire to discover and explore new galaxies in the universe of sensations. For this reason, we have decided to produce a Sparkling Wine in a land renowned for red wines.

Astris is a different Sparkling Wine, emphasizing uniqueness over comparison.

To Astris, I dedicated a poem that represents the bond that unites us:

Tasting Notes

Astris, the classical method according to Siridia.

Blanc de Noirs aged 24 months on the lees and zero dosage, Astris is born from a blend of Pinot Noir grapes cultivated in the Lake Garda area and Corvina grapes from the Siridia vineyards.

A wine with a fine perlage, good structure, and persistence, which manages to reveal new aromas with each sip: a slight hint of bread crust soon overshadowed by fruity notes of citrus such as grapefruit, transitioning to marasca cherry and wild strawberry… As the temperature of the wine in the glass increases, the unique character of the Corvina emerges strongly, spanning fruity and floral aromas.
